Higgidy Pies and Salad

If ever you want me to do anything offering food is always a good place to start. If you add in something that I can do with the girls then it's a real winner. When the lovely people at Higgidy said they want us to grow some salad and eat it with some of their yummy pies then I was never going to say no. As part of the task they very kindly sent us some salad plants to put in the garden including lettuce, mustard, and various other varieties of salad leaves. Ever since Aly was young she's always enjoyed gardening and we've our own raised vegetable garden so we always grow things like potatoes, spinach, onions and courgettes so the salad fitted in nicely with this.

Higgidy supplied us with a huge collection of pies and various quiches. from flavours such as Chicken & Smoky Spanish Chorizo Pie, Sweet Potato & Feta Pie with Pumpkin Seeds, Little Balsamic Onion & Cheddar Quiche and Little Smoked Bacon & Cheddar Quiche.

There is possibly no greater food for the Summer and picnics than quiche. Now I'm a fussy so and so and as a result of this I don't like cold quiche but my wife will only eat it cold. As it's the Summer the only thing to have with them is fresh home grown salad. We like to keep our salads clean and simple.

Grab some of the salad leaves and give them a good wash and cut up fairly roughly and use this as the base of the salad, next add in the cucumber which we have slices and then quartered and then finally add some colour to liven the plate up. We used red and yellow pepper and tomatoes so the meal isn't so green. A very lovely and filling meal which is also healthy.
