A Mother's Day Family Feast

Towards the end of last week we got sent a hamper full of lots of yummy food. The idea behind this was that the girls and I would prepare a yummy meal to give 'Mummy the Day Off'. I love cooking but don't get the chance and I'm very lucky that when I get home my wife has usually got dinner ready for me. 

Now the plan was that we would cook a sweet spiced pulled pork meal with plum compote cooked in the oven but we decided to cook it slightly differently. As the pork we received was pretty big and too large for us we also invited the In Laws over for a meal...that way I'd be in the good books. 

In this house we are a lover of the slow cooker and this was the first time I'd tried pork in there but it was simple enough. Before starting I rubbed some salt and pepper in to the joint and then added some paprika for a little spice. To cook perfectly this took 7 hours on a low heat and it just fell apart and was full of flavour. 

To go with this we had some roasted new potatoes which are so yummy, simply part boil and then roast just like normal but with the skin left on they make a nice change to usual roast potatoes. Rather than just having that we also had salad, cous cous and bread rolls. 

For the plum compote you will need 175g of stoned and chopped plums, 175g of cooking apples that have been cored, peeled and chopped, 25g butter and 25g of light brown sugar. To make it simply put all the ingredients into a pan with about 25ml of water, then cover with a lid and bring to a gentle simmer. Turn the heat down low and cook for around 5 minutes until the fruit has cooked down and softened. Season with a pinch of salt and give everything a good stir. 

Having never had plum compote before I was unsure but it was lovely and made a nice change from apple sauce. The overall opinion was that the meal was delicious and is something we would have again especially Aly who had seconds.
